Hopefully someone more experienced in opals will weigh in and support or correct me, but I believe Mexican opal has a strong propensity toward crazing (cracking) and it is placed in oil to keep it from dehydrating which is the cause of crazing. It also could be that it's already crazed and oil would prevent that from being readily seen.
