This technique is known as geobotanical prospecting. It is based on the observation that certain plants either need or can tolerate higher than normal amounts of certain elements. In the case of turquoise, phosphorus may be the critical element.
You may be able to find more information online. I recall seeing a textbook on the subject many years ago.
